How to plan a BBQ catering order

The rule of thumb for catered barbecue is roughly a third to a half pound of cooked meat per adult. Use the lighter end when BBQ is one of several dishes or the crowd skews toward kids and lighter eaters, and the heavier end when the smoked meat is the main attraction or you want guests taking plates home.

For groups over about 30, two proteins keep the line interesting. Pulled pork is the reliable crowd-pleaser, and brisket is the showstopper for weddings and milestone events. A full pan of sides like mac and cheese or potato salad serves around twenty as a side portion, so most events land on two or three pans split across a couple of favorites. Bread and serving utensils come included with every catering order.
